Oh man, ich liebe diese Kekse. Und ich muss das Rezept mit euch teilen, denn jeder, der mal von meinen Keksen gekostet hat, fragt nach dem geheimnisvollen Rezept.
Hier kommt es – exklusiv und natürlich ganz geheim 😉
Zutaten:
300 g Mehl (zu 50% Dinkelmehl, zu 50% Dinkelvollkornmehl)
300 g Roh-Rohrzucker
300 g Margerine
2 Päckchen Vanillinzucker
5 EL Sojamehl
10 EL Sojamilch oder Wasser
2 TL Salz
ca. 200 g Zartbitterschokolade oder auch mehr – je nachdem, wie ihr es mögt

Das Geheimnis an diesem Rezept ist das Salz. Der rohe Teig schmeckt erstmal sehr salzig, aber wenn die Kekse gebacken sind, schnecken sie fantastisch!
Als erstes Mehl, Zucker, Salz, Vanillinzucker und Sojamehl gut vermengen.
Die restlichen Zutaten bis auf die Schokolade hinzufügen und gleichmäßig durchmixen.
Den Backofen auf 150° C vorheizen. (Dies ist das zweite Erfolgsgeheimnis meiner Kekse – die Temperatur ist niedriger als normal)

Auf einem mit Backpapier ausgelegten Backblech rund-geformte Kekse plazieren. Dabei müsst ihr aber unbedingt darauf achten, dass sie in einigem Abstand zueinander und nicht zu groß sind, denn die Kekse werden während des Backens riesig !
Jetzt die Schokoladenstückchen auf die ungebackenen Kekse dücken und ab damit in den Backofen.
Die Kekse sind nach etwa 12 Minuten fertig, aber ihr solltet besser gut aufpassen.
Wenn sie aus dem Backofen kommen, sind die Kekse erst noch ganz weich, aber das ändert sich, während sie auskühlen.

Wenn die Kekse verschenkt werden sollen, dann ist es natürlich besonders süß, die in durchsichtiger Folie zu verpacken und sie mit Labels zu versehen, so wie meine hier:
